It's definitely a simpler, easier completion than any other FFs that have been on Xbox so far. You get most of the Achievements just playing through the game normally, and then the remaining ones are easy to mop up.
I have 87 hours in my biggest save file, but you could get the 1000G in about 30 hours if you stayed focused. I know that is still kind of a lot, but it's far less than what the FFXIII games required.

After finally finishing the story, that was where I was too. Every other skill was 10 but Fishing was only 3 because I freakin' hate it.
It really wasn't bad getting it to 10 though. I went up to Vesperpool tackle shop at the far NW of the map and bought the best rod & reel, and a bunch of Dragon's Beard line, then went down to the fishing spot on the pier at Galdin Quay. During the day, it's primarily full of Giant Trevally and Galdin Trevally, and at night it's Glowing Barrelfish, and all of these are pretty quick to catch, you just alternate your lure based on time of day.
After hitting 10, I checked the records and I had caught about 120 fish total. When grinding this, I would go sleep at the nearby caravan every couple hours because as your skill goes up, it unlocks things like better lure attraction or stronger line, so it's worth it to take those breaks rather than just grinding through straight.
For the Adamantoise, people have all sorts of extensive guides on how to prepare so the fight doesn't take 3 hours, but I didn't feel like going through all that, so all I did was camp nearby the hunting spot and had Ignis make one of the meals that gives "Clairvoyance" which guarantees critical hits.
Instead of doing fancy tactics like warp-striking and airdance-comboing the eye, I just sat down by one of the big legs and hit it with the Ultima Blade, while keeping 3 Royal Arms equipped for Strength bonuses. You need to actually hit B repeatedly instead of holding it down, as this will cause you to run after the lock on point and waste time. You can use Prompto's Piercer to lower defense and Ignis' Libra to help you hit a little harder, but don't bother with Dawnhammer or other techniques because their animations take too long. Activate the Armiger every chance you get but don't use the Chain attack, just keep hitting like normal.
+edit+ apparently in the last update they nerfed the Adamtoise's health by 30% so I guess that was why I still got it done in half an hour without extensive preparation or tactics. I have tried everything I can think of to get the chievo to pop, so I guess I'll bite the bullet tonight and kill it again, and will make sure to save BEFORE I turn it in just in case.
+edit2+ so I didn't have the ingredients to make crit soup again, instead I just cooked the highest attack food and fought the Adamantoise a second time. 45 minutes. Made a save file after killing it but before turning it in to Takka -- of course, the achievement didn't pop. I may have to play through NG+ up to Ch 9 all over again.
