The only reason I tangled with a dragon was because it was part of a misson I am doing for the imperial army. I still have to finish that mission which is why I was asking for tips. I think this time I am going to sit back and launch arrows at it for a while. Other than that I am trying my best to avoid dragons until I level up.

Having a companion always helps too. There's an elf archer in Riverwood that you can find early on. He'll follow you if you side with him in that easy side quest about the love letters.

Edit: Also, is there any easy way to tell what weapons are one handed? I have a preference for the one handed weapons so I can use destruction/shields. I don't want to have to keep buying weapons just to see if they are one handed. Does anyone know where I can get a good one handed weapon early in the game?

Claymores, Greatswords, Warhammers and Battleaxes are two handed.
Waraxes, swords, maces, daggers and scimitars are one handed.
For a strong one handed weapon, head to a ship docked somewhere in the north and kill the guys on it for Scimitars, or do the quest for the redguards early in the game and help the woman they want you to find for more scimitars. You can upgrade them with either steel or iron ingot (can't remember which, they're both very abundant and cheap).
Glass and Dwarven maces upgraded do an insane amount of damage and also have very quick attacks.
