I liked the episode a lot, and I didn't even notice the glaring omission of you-know-who until I saw all the online furor.
It has been so long since I read the first few books that I have forgotten more than I remember--I know the show isn't 100% accurate and that's fine to me, I am going to re-read them anyway. I like how the show can still surprise me!
With that being said, it was incredibly stupid of them NOT to have you-know-who appear at the very end. It would have made for a better cliffhanger ending, leaving people going WTF WTF.

I feel like the pacing of the show is sometimes so off, then they have a show like the finale and prove they CAN do it... So it really highlights how phoned in some of the other episodes have been. That sucks because we are talking about a 10 episode season and 10 months off between seasons. The have the time, and I think fans deserve 10 "on" episodes a season.
@meta- I don't mind deviation from the books, it makes me feel like I'm getting more than if it was just across the board book stuff. That said, some of the changes change the plot of the show or the motivations of the characters this season, and it kind of sucks. Because now I'm not sure that we will get the boo 6 and 7 that we were supposed to, or if it will follow the show and end up with huge plot holes.
