Is the game open ended for DLC and such?
after you do the final mission and complete the story it loads a previous save so you can do dlc and other missions as well,so it sorta is open ended.
Sounds like what they did for Dragon Age II.

I haven't played ME or ME2. Should I get ME3? Or is this one of those games I should play through the first two first?

I recommend that you begin from the first game. All of the decisions you make will carry over into the next games. With this in mind, you will have your own personal touch on every playthrough you make. The game will not be bad if you do not start from the beginning of the series, but I assure you the storyline will be more intresting and you will have a better grasp of it.
Pretty much the same answer I got when I asked the question about Saints Row. Thanks man, I'll just start from the beginning!

I was just reading about a glitch with importing ME2 saves from the cloud. Importing game saves from the cloud won't work with ME3.

Let me add to this by saying ME1 starts off a bit slow and takes a while to get going and become really fun & interesting, but stick with it! At least play 1 long enough to get off Citadel (you'll know what i mean when you get to that point in the game) and then decide if you want to finish it or go on to 2.
2 is a great experience all the way through and definitely deserves a thorough playthrough.

That helps more, is there any game you'd compare ME1 to? Like the actual gameplay?

Mass Effect gameplay is like Star Wars KOTR with slower paced Gears of War combat.

ME1 + 2 were both built using the Unreal engine so they both kinda remind me of Gears 2, but with thinner characters, speech options, lots more color and you get to romance an NPC.

Hey, hey. Marcus romances Anya...kind of. And Baird has a thing for "Jack" as all know.
