Green olives are allowed to ferment before being packed in a brine solution. American black ("California") olives are not fermented, which is why they taste milder than green olives.
And pickles are in a brine as well.....I'm guessing brine causes metal to rust.

You guys are on crack! Black olives are a waste of space! They have no taste and are basically just used for garnish to add color to a dish. They're kept in cans because they should never see the light of day! Green olives are so delightfully salty. I used to hate them but have grown to love em, especially on pizza.
Black olives are the bastard child of the olive family!

both green and black olives are good IMO. it all depends on what you eat it with. but generally, yeah i do prefer black olives, especially on my subs from Subway
