Yeah, snakes are literally everywhere. Your horse will whinny when you ride close to one. As Meta said, listen for the rattle and then just aim at the ground around you and you should lock onto it.

Still have not find snake yet. When ride horse do you go slow or fast?
Go slow, they rattle whenever you're close. So if you hear a rattler stop and follow the sound while aiming at the ground. They do blend into the foliage well so just keep hitting the left trigger until you lock onto it. Just be careful you don't stop right on top of one or it'll bite your horse.
