I would mix Mass Effect 2's engine, gameplay and production values with the flight sim aspects of TIE Fighter to make the ultimate Star Wars game.
Instead of "biotics" you'd have Force sensitivity, but you wouldn't necessarily have to be Jedi or Sith. You could be a hybrid "class" where you use the Force to enhance the other stuff you do. You could actually fly missions in space, dogfight, attack cruisers, disrupt convoys, or even escort missions (urgh).
It would be arranged sort of like Fallout 3 -- there would be a story/quest, but there would also be a huge galaxy of other stuff to do during/after that.
Chronologically I would probably set it right after Return of the Jedi and use Timothy Zahn's Heir to the Empire trilogy as story basis.

I'd like a Super Smash Bros. type game but for Microsoft and Sony. Same concept, a bunch of famous characters from games on the platforms, but much more violent and bad-ass
