Well I know about a lot of easter eggs and glitches. Mostly in the Call of Duty, and Halo games.
Every single game, EVERY LAST ONE, has glitches... they just go unnoticed.

I remember is Castlevania Lord of Shadow, in the level where you fight this giant monster, who is also a chef/butcher, right before you face him, the player has to crawl through a tight passageway with a top down view and for a few seconds theres a tune from the Metal Gear games starts to play.
I thought that was a cool thing they added. This next one isnt very hidden, but its something you can unlock, I believe after you beat the game, you can have Gabiel (the main character) where Snake's eye patch and bandana.

It's not an Xbox game, but can't help but share....
In MGS: Snake Eater, when snake gets the tracking chip implanted in his back, leave it in and you'll get a scene with him and Eva. That's one of about 100 Easter eggs in that game.
Or that dream sequence where you demo another game.... never did that though.
Oh, and I love MGS 2! Best mask ever.
