I remember almost killing them just by circling around 1, it was a slow long battle and I eventually died due to a mess up on my part, after I respawned someone joined my game and pretty much one-hit both of them lol.

Snapple, go human at the bonfire (I assume you know how to do that) and before entering the fog gate, granted you're human, you will see a small yellowish-white summon sign. This will summon an NPC companion for the fight. Have him focus on one, and once the other pops up, focus on the second one, then help him finish off the first gargoyle if he's still alive.
