if it's not that much stuff to transfer, i'd suggest investing in a memory unit. a 512MB costs $30 and you can store your profile and all your game saves on there easily. as for arcade games and DLC, just delete and re-download them onto the new HDD.
with a 512MB, not only can you transfer all your stuff easily, but it's pretty convenient in case you want to bring your profile/saves to a friend's house or something without having to bring the whole HDD

they do sell them separately, just exclusivelly from MS, has to do with game saving I presume.
also its easier with transfer cable rather than memory card, as it transfers everything. plus DA saves and some other acade games said they weren't available for transfer, when I was backing up. Transfer cable takes care of it
