How long does 1 of these matches take? You should have the total round at least an hour for it to be a tournament not just a quick game if you feel me. So if they take 10 minutes do best of 7. If they take 15 minutes best of 5. If they take 20 minutes or more than best of 3.
they are pretty quick id say like 7-15 minutes maybe a round then another for the opposite side

it doesnt. you join on a side and either you win or lose then it goes to either swapped sides or next map. I am unsure exactly what happens in a private game because no one will get on to figure this out.

On 1 map you play attack and defend. When match over switch side it will be same map. I done it in private match few month ago.

yes deathmatch is out of the ? because of randoms popping in.
Deathmatch is out of the question because you can't play it in a private game

Attacker will have to destory crate to move on 5 stage. After destory all 5 crate attacker win. Now on defend. Defend will have to protect crate and killing attacker till attacker point gone. Attacker point gone so defend won.
