ohhh in the new dragonborn dlc I thought you were referring too, in which case it still happens where the npc can die and not be able to do a side quest for an achievement.
there's multiple people to buy resources from in the hearthfire dlc, so you should be alright.

I think for me the hardest achievement or the one that took FOREVER was either the endure achievement in halo 3 ODST where you survive till like set 4 on heroic difficulty in firefight, but the one that took the longest was beating the final boss in gears of war 3, queen myrrah, on insane even with 4 people. That took almost a full day!
