Final Fantasy 12 for sure. I recently went back and purchased a PS2 just so I would be able to play it again... I still have my save file from years ago but decided to start fresh again in it. I know a lot of people hate on that particular FF game, but for me it is the pinnacle of the series thus far released stateside. The game seems like a single player mmorpg while playing it, it's hard to describe but an amazing game.

You should definitely try out FF 12 then, you can find a used copy for around $9.99 at most places.
The game has so much to offer, try not to use a strategy guide the first time around and just enjoy it.
