Honestly so far I would have to say the Da Vinci Disappearance on Assassin's Creed Brotherhood. Not only did it develop the story further, it was fun, and not too hard to complete. Kind of a trifeca for me.
Honestly I can't think of too many other DLCs that had all three, interesting fun and not too difficult.

Yea, the only bad reviews it gets are from people who suck at it and don't give it a chance because they're not good right away.
