I spread my saves across two Elites and I'm still not able to rip as many of my music CDs to my hard drives as I would like. Plus if you are working on 5 or 6 games loaded to your HD that's 25 to 30 gig right off the top. I don't think it's unreasonable to think someone would have a collection of 10 games loaded on their HD at any given time. 120gig is still plenty, but 60gig is too small.
