Were you using the sniper? I head shotted everyone I hit in the head with a sniper... Not the handgun though... I mean is that even realistic? If I shoot you in the head with a handgun from 50 feet away, your head it NOT going to explode like a watermelon.
Depends on what type of handgun your using, a desert eagle using 50 caliber bullet with a explosive round can take your head right off or pop like a watermelon.
However back to the game wasn't really impress besides the graphics of it but it was a demo so my opinion might change

Ammo is scarce in the game, but then again, it's supposed to be. This isn't Call of Duty or Gears of War where you could kill 25 guys in a row without the need of ammo. You're tryin to survive, and there's not going to be anybody to debrief your mission or refill your ammo. Once you're out there, you and your partner are on your own, and I think that's what it's meant to be. I love how your enemies drop random ammo supplies though. It adds some guessing to the game, where your choices are run away and conserve your ammo or try the shot and hope that your enemy drops something useful. By the way, does anyone know if there will be difficulty levels in this game? The demo's hard enough, and I wanted to see if there were any harder difficulties.

Remember, this demo is 5 months old, it's just the reworked Japanese demo. This is by no means indicative of what the final game will be, except the sheer levels of awesomeocity.
And I never once ran out of ammo in the demo, and that's giving Sheva every other drop. This isn't a machine gun, shoot blindly, have 20% accuracy and get through the level game. This is a shooter where you don't take the shot if you're not sure.
It's just soooo fun!!! I can't wait for it!!!
Also, I believe there are 3 difficulty levels, amateur, normal and professional, and I think the achieves for difficulty are stackable, at least that is what I heard.

When you watch Sheva, she fires the machine gun like a freakin rifle. I mean, I've heard of burst shots, but seriously...
Anyway I'll probably play it on professional because I love playing survival horror games on the hardest difficulty. It'll probably be easier than dead space's hard difficulty... everytime someone attacked me I shit my pants.
