Soul Calibur IV is my favourite fighting game overall and it has a large selection of characters, including the ability to make your own, and plenty of things to unlock. Equally great on- or offline.

If you don't mind repetition, Onechanbara: Bikini Samurai Squad is hilarious and pretty fun. It stars girls that absorb blood through their skin and become more powerful, so you wield swords and later guns and plow your way through tons of zombies.
The game is very gory in cartoonish ways and has nice little features like blood spattering on your screen and dripping down. The graphics are nice but the levels are kind of simplistic. Co-op on the same console is fun but it sucks having the screen split. Achievements are very slow in popping but not difficult.
